Turkey, like some holiday guests, can linger a bit too long. It’s a wonderful symbol of delicious holiday cheer but at some point you must begin your search for leftover turkey recipes. And, while you’re at it, here are some tips for gently and politely asking your guests to leave!
1) Creamy Corn & Turkey Soup
Warm your soul on a cold blustery night with this filling soup. The cream cheese and milk give it a wonderfully creamy consistency, and the turkey, corn, onions and red peppers add flavorsome volume. Without a doubt, this is one of the best leftover turkey recipes around.
Servings: 6
Ingredients
1/2 cup chopped onions
1 red pepper, chopped, divided
2 Tbsp. butter or margarine
4 oz. (1/2 of 8-oz. pkg.) Philadelphia Cream Cheese, cubed
2 cups shredded cooked turkey
1 can (14.75 oz.) cream-style corn
2 cups chicken broth
3/4 cup milk
1/2 tsp. cracked black pepper
Directions
Cook onions and half the red peppers in butter in large saucepan on medium heat 5 to 6 minutes or until crisp-tender, stirring frequently.
Add cream cheese; cook on low heat 3 to 4 minutes or until melted, stirring constantly. Stir in turkey, corn, broth and milk.
Cook 5 minutes or until soup is heated through, stirring occasionally. Serve topped with remaining red peppers and black pepper.
2) Turkey Waldorf Salad
Want to keep it healthy and go green? This is a perfect leftover turkey salad if losing weight tops your list of New Year’s resolutions. The red grapes provide a burst of sweetness, while the peanuts add a nice crunch.

Ingredients
1/2 cup chopped cooked turkey breast
10 seedless red grapes, halved
1 Tbsp. coarsely chopped Planters walnuts
1 Tbsp. reduced-fat mayonnaise
1 lettuce leaf
6 Triscuit Reduced Fat Crackers
Directions
Combine first 4 ingredients.
Spoon onto lettuce-covered plate.
Serve with crackers.
